Hi guys thought id let all you squid lovers out there know a chefs secret tip on how to get really tender squid. I worked as a chef for 8 years and there was alot of different ways we kept squid like in milk or just covered in the fridge but i was shown this tip by a chef and since then i have never looked back it is really simple here is the method:

you will need one to two kiwi fruit
cut the squid into pieces ie trellissed strips, rings or squares i have not tried it with full tubes but it would work and place into a container suitable for the fridge . then squash the kiwi fruit into the container and mix around to coat the squid cover and put in the fridge overnight, then use in any dish works best in salt and pepper squid crumbed squid, stir fries or any other dish you can imagine up cheers guys happy eating and no more rubbery squid

cheers benny it really does work it probably works best on squid that has been frozen

Next time I go to Adrossan I will score some squid and give it a go, previously if I wanted them tender I would cook them for a long time on low heat, but I reckon your idea sounds better.

just another tip if you are say deep frying for s&p squid or crumbed squid hot oil and 30 seconds is really all you need its called flash frying and with the kiwi fruit tip its beautiful.

I caught a fish that big last week that when i took a photo the Negative wieghed 4lb!!

Salmon and fiddler rays were great in milk,(rated equal to whiting) turns out to a mild taste, give it a try!

Squid are hell wicked bait!! the only metro eaglie I got was on a squid caught at semi!

try leaving squid out for a few days on the grass so its nice and pongy....its even better bait then for snapper.

I agree as snapper are scavengers and dead bait that smells a bit is natural to them.

i think you can use that same method to with crocidile meat.
