Hi guys just a quick question, can i freeze blue swimmers after they have been cooked?? cheers OS

no problems either freeze them whole or just freeze the meat just the go for thai chilli crab cakes later in the season

thai crab cakes
500g of crab meat
500g of cold mashed spuds
2 eggs ( to bind the mix together )
1 onion
chilli powder to your taste

mix it all together form into patties and roll in bread crumbs
shallow fry in olive oil
sweet chilli sauce and cold beer optional

I must be missing something,everytime I have tried frozen crabs they have been pretty ordinary,bit mushy ,and sort of like the flavour has been leached out.
Only ever eaten crabs caught myself fresh,and if ever had left over instead of freezing got the meat out and put in a jar of vinegar with a bit of pepper,and eaten on sangas for a few days until gone.
But in saying that the frozen ones tried were always some that someone had bought from the market/fish shop,maybe that had something to do with it.

if freezing crabs cooked or raw take the body shell off and clean guts out pull the dead mans fingers off or they will change the flavour of the crab (worse)

Not to detract from your recipe in any way, but can I also suggest for a Thai style recipe, also adding:
Grated ginger
Minced garlic
Chopped coriander
to taste.

Also, use red onion for the sweetness, not white or brown.

Garnish with a wedge of lime for squeezing and a sprig of coriander.

Serve this on a banana leaf and your friends will think you are the worlds newest masterchef!

Don't freeze your crabs Old Salty a mate of mine tried that once and all he got was acheing balls, just go to the doc and get some cream or something

Crab meat kept in vacuum sealed bags are still great after 3 months.
Just don't wash them in fresh water, put them in saltwater slurry to set the meat.
Makes a nice crab meat and sweetcorn soap.
Way better than the stuff you get in cans.

If you have so many crabs that you have to freeze them then you are taking TOO MANY!!!! Lay off and leave some for other people.
