[/quote']Personally I find that snapper, maybe a bit more than other fish , can go stale fairly quickly when frozen, then again usually mine are often hard to fit i9n the freezer anyway We've found crumbing the fillets before freezing helps keep them fresher for longer, and as brenton said, freeze your large ones and cut them up with a large saw to make good cutlets Quote Link to post Share on other sites
Barnett 0 Posted December 16, 2010 Report Share Posted December 16, 2010 When i freeze whole snapper i leave scales on and seal compleaty.So no part of fish is exposed to freezer cold air as it will suck moisture out of fish.Plus the less air in with the fish the longer you can keep in freezer.
