Whole smoked Snapper

Recommended Posts

Yum, thought I'd have a go at smoking a whole Snapper. Had one in the freezer that just nicely fit into the smokebox. No brine, just rubbed on rock salt, olive oil and brown sugar.Used The oak wine barrel sawdust from Angler's Choice.Chucked him into the smoker then baked him slowly in the BBQ for an hour ( still in smokebox).Thought it would be different to take to a party tonight.Sneaked a taste and I'm very happy with the result, nice to go with a few beers but I'm driving!Posted Image

Sensational Tyke' date=' looks too good to eat mate! With or without scales on??[/quote']Scaled it - should have done it when fresh as the freezer makes the scales stick even harder!

what do u think of that wine barrel oak stuff??? i reckon it goes alirght ;) that looks tasty as fella... all i need now is a snapper :D :D

It does work a lot better when you have a Snapper to hand :P :P The wine barrel shaving are terrific- be a little sparing with them though - the fish did have a little bit of an oily after-taste which is due to over smoking
