Piranha 76 Posted May 1, 2011 Report Share Posted May 1, 2011 A pretty simple recipe but a good one:) Tail and de-claw yabbys removing vein by twisting and pulling middle tail fanBlanch for 2-3 minutes in salted waterDunk straight into ice water and leave to cooluse a nutcracker to crack claws but don't remove shell, then use scissors to cut the top side of the tails length ways(easier to remove meat later than cutting the underside)chop green chilli and garlic cloves and add to wok with 2-4 tablespoons of oil (preferably rice bran or canola oil)Cook chilli and garlic for 1 minute or until fragrant then throw in tails and claws quickly followed by some chicken stock (vegeta brand is very good for this) stirr around for a couple of minutes add salt and pepper and serve either by itself or on rice with some crunchy bread to soak up the juices.I find this recipe works well because it doesent overpower the taste of the yabbies and if anything brings that flovour out more. enjoy:) 4THALOVE 1 Quote Link to post Share on other sites
