archerfish 685 Posted August 27, 2011 Report Share Posted August 27, 2011 G'day AllPicked up a new recipe book last week...The recipe for "Fried Squid with Lime & Ginger Mayo" states in part:"Place the rings and tentacles in a bowl, then pour over the soda water and leave for 20 minutes to tenderise."I've quickly Googled the topic and there seems to be some basis to the procedure.Just wondering if any of you out there have tried it and,if so, how successful was it?Cheersaf Quote Link to post Share on other sites
Piranha 76 Posted August 29, 2011 Report Share Posted August 29, 2011 Haven't heard of soda water but bi carb soda definately works as well as kiwi friut juice, they break down the proteins making the meat tender but be carefull not to over do the tenderisation or you'll end up with desintergrating squid Quote Link to post Share on other sites
