Baked Snapper with Bacon

Stuffing:Mix bread crumbs, rind of 1 lemon, chopped spring onions, and browned onion. Add lemon juice to make moist, and so mix sticks together.Take a whole snapper fill cavity with stuffing.Take a large piece of foil, rub with butter, lay fresh rashers of bacon over butter, sprinkle with lemon juice and season with salt & pepper. Lay on Snapper and lay rashers of bacon on top of fish, sprinkle with lemon juice and season with Salt & Pepper. Butter another piece of foil and seal tightly.Put on baking tray and into oven for approx 20-25mins on a medium heat.Open foil and enjoy, the combination of bacon and Fish is something else.Serve with a nice basic tossed salad, chips and a White wine.Enjoy that,Ninja
