ywurrie 0 Posted November 17, 2008 Report Share Posted November 17, 2008 if you chuck a handfull of washed coriander (stems and all in the blender with a clove of garlic, half a teaspoon of paprica, juice of a lemon and half its zest, 2 table spoons of olive oil (or veg oil) plus salt and pepper then smother your fish with it then bake or grill it should be pretty good (add a chilli or 2 if you like a bit of boogie in ya woogie)(and if you happen to have some parsley too it works well in there too) Quote Link to post Share on other sites
Ranger 48 Posted November 17, 2008 Report Share Posted November 17, 2008 Coriander is fairly pungent, used often in asian style dishes, and also goes great with chili, garlic, ginger lemongrass, lime, mint or a combination of any of these.Stuff whole fish with a mixture of these herbs and bake, steam whole fish on a bed of coriander and these herbs, make a paste from these herbs to brush over your fish and barbeque or grill, or just sprinkle a little of these herbs over your fried fish after it's cooked.For me, part of the fun in cooking is the experimentation and trying new things. With fresh herbs and fresh seafood it's actually pretty hard to go wrong. Just remember with seafood, only marinate for about 1 hour (not overnight) and cook it slowly over a very low heat for a long time OR very quickly over a high heat for a short time! Rule of thumb though-fresh is best, and the best of the best is what you've caught yaself! Quote Link to post Share on other sites

Whole snapper cut down the guts put in cut lemons, onions, garlic, a can of tin chopped tomatoes and coriander. Salt and pepper on the outer and inside and. Wrap in alfoil and throw in the oven or webber or the big green egg!!!!Dig a whole near your fruit trees and bury the snook. Water them in. Best food the trees will every have. Its called soused snook.http://www.classic.com.au/wizard/fourdancesrecipe.htmI have made it and it tasted great however i take wasabi with me in the boat and eat raw tommies.
