Thai Seafood Salad

Ingredients SALAD 1 cup Fresh crab meat 25 Medium prawns, cooked, peeled, deveined, cut in half lengthways 4 Red shallots, peeled and sliced 1 Stalk of lemon grass, tender centre only, sliced finely 3 Kaffir lime leaves, shredded 150 g Black funghi 150 g Shimeji mushrooms, trimmed 1 bunch Corriander (leaves only) 1 bunch Mint (leaves only) Small handful Mizuna leaves DRESSING Half cup Lime juice Quarter cup Fish sauce Quarter cup Palm sugar 1 or 2 Fresh red chillies, seeded and finely sliced 1 clove Garlic, peeled and crushed 100 ml Coconut cream METHOD 1 Combine all dressing ingredients 2 Just before serving place salad ingredients in bowl and toss together 3 Pile salad on to a large plate 4 Pour over dressing 5 Serve at once
