Is anyone clued up with the variations of wood chips available and what types of foods they are best suited for ? what chips do you find best for fish ? chicken ? pork ribs etc ? mmmm......pork ribs. cheers,
Underpants 1,543
Nup as ive been lazy and buying redgum sawdust from the local. Have some nice seasoned olive & plum wood ive been meaing to drop the saw thru but havnt got there yet. Both smell pretty good when they go up the chimney! Apparently apple & cherry are rather nice too. Anyways im just using a cheapie stainless box smoker & STs (and tomatoes to make bbq sauce)! newtontoney
Kelvin 2,199
I use whatever I can get my hands on. Hickory and mesquite and great. I was using a mix of Aussie hardwoods from a friend who did some woodworking but am almost all out. At the moment I am using passionfruit vine as mine has died and I've got a heap. It is nice with both fish and meat. I would like to try rose canes next as I have a heap of roses and the wood is meant to give a similar flavour to apple wood. newtontoney

jagger 24
If you can get your hands on empty wine barrels, some of the flavours can be amazing newtontoney and Fishie
