jerome 0 Posted November 17, 2007 Report Share Posted November 17, 2007 Maltese Style whole baked fish..Chef: Jerome CaruanaThis dish has been in my family for many years, the thing i like about it is that the dish is so easy to do, and although quiet rustic, the flavour explosion in the end is well worth it. These Flavours are amazing, and can also be used as a salsa if chopped finer, and used as a condiment.Personal Preferences for fish: works well with Bream, Snapper & Dory.Fish [pref whole & cleaned] CapersTomatoesLemon juiceMintGarlic [chopped fine]- to taste.AnchoviesOil [i like to use grapeseed]/or olive] I chop all the other ingredients- finely. Oil and lemon juice to taste. 2-3 lemons approx. Score fish if whole, 2-3 slashes, mix all other ingredients together. Stuff some of it into scored area, the rest inside/or alternitivly on top. Bake in oven till cooked Serve With a side of steamed Jasmine Rice & finely chopped chilli for the ambitious! Quote Link to post Share on other sites
