In answer to an often asked question:http://www.youtube.com/watch?v=JdniiLLKHloI always cut down through the backbone behind the head and at the base of the tail immediately upon capture, and also remove all the fins to help prevent the build-up of ammonia in the flesh.Shark is one species which is actually better frozen before eating, to rid the flesh of any residual ammonia taste.
