Guest Graysy Posted April 10, 2008 Report Share Posted April 10, 2008 Ingredients4 thick fillets of fish cut into 3cm pieces (I use Barra)12 pieces of rice paper1 green chilli1/2 bunch fresh basil1/2 bunch fresh coriandersmall knob of ginger1 clove of garlic1 stick of lemongrasssesame seedsSauce4 tablespoons soy sauce2 tablespoons fish saucejuice of 4 limes1 small red chilli4 tablespoons waterInstructionsCombine sauce ingredients and refridgerate while preparing the fishDunk rice paper in warm water and set aside on a clean tea towel to drain. In a mortar and pestel combine all ingredients except fish and grind to a rough paste. Place one fillet of fish on each rice paper and smear paste over the top. Fold rice paper over to form a parcel, then place fish parcel in frying pan and cook 2-4 mins each side. (I shallow fry each fillet)Remove from pan and place on an asian green salad and sprinkle with sesame seeds.
