How did you go?
I haven't fished the Torrens for a few years, but I used to fish near the zoo and the uni. Some years there are heaps but not always.
Heaps of carp everywhere in the Murray river at the moment. I usually go to Goolwa or Murray Bridge as they are close to Adelaide. Fresh is better. Stinky bait will work but not necessarily better and avoiding smell keeps the family happy as well as those fishing around you.

Seamartin Wood reel Page 10 | Vintage old collectable fishing reels (reelmanaustralia.com)
Looking at the darker foot and oscillator guide made of teflon, I would guess you have a Model 4,

Several Hundred to over $1000+ depending on condition.
Is yours working?
There is one on facebook asking for $1000 at the moment.

You can get anything printed on a reel in China
These are the same as almost all the other silver sub $50 reels and likely from the same OEM factories with just minor cosmetic changes. One of the clues is the Daiwa air rotor style design.
They are actually not bad reels if you buy then cheap. Instant anti-reverse, reasonable smoothness but probably 50g or more heavier than the same sized Shimano and Daiwa.
I've got 4 and am buying more.

Reel servicing is getting expensive. Daiwa is currently $40 a service for standard reels and $70 for high end. They usually drop in new bearings at the first sign of wear at $10+ a bearing.
I've paid over $100 a service each reel for my fancy reels.
Recently I've been dabbling in the cheaper end of the market, especially for wading and kayak fishing. I've got 5+ years out of a pair of Kast King Sharky reels. They are not as smooth as Shimano or Daiwa but they have survived the saltwater and are still reasonably smooth.
Ali Express also has some bargains and I'm sure the same factories make the Savage Gear Reels.
I'm pretty happy with these for $30 a reel. They feel as good as my low end Shimano and Daiwa reels for less than the cost of a service. They are solid, just a touch on the heavy side.

Welcome David
Trout in Adelaide is very niche as the populations are so small and the waterways are tiny. I don't think there are any fly fishing guides locally. There are a few small streams that hold populations of trout, some private dams that are stocked with trout and a rivers up North (several hours by car) that will hold trout.
If you are interested in Freshwater natives and redfin then there are alot more options. The trout fishing in SA is nothing compared to the Alpine streams and lakes of NSW or NZ or Victoria.
A few questions
How long are you in Adelaide?
Do you have the ability to travel?
Have you got access to a car?
Trout only or are you interested in other species or saltwater fly fishing or non fly fishing?
If you are set on trout in SA, then contact SAFFA as documented above or South Australian Fresh Water Anglers Association is another resource as they may have access to dams stocked with trout.

You can also type the website into scamadviser and they will give you a trust score

If I'm not sure I usually do a whois check of the URL and also check that the company is registered

The Otto's combos tab is interesting. Looks like they have lifted their data from Otto's Tackleworld website.
Hard to stay on top of all the scam sites as it is just too easy to register a website these days. Once they are caught out they just start another website.
Other than price, the first thing I do if I'm suspicious is check the about us section and see if there is a name, contact detail, history of the brand and location, then check if they have a social media presence.

Here is the jig wall under UV and then with the lights off
Interestingly UV does not equal glow
UV And You | Northland Fishing Tackle (northlandtackle.com)
UV is not a bad thing but I've done well on Tuna lures that did not light up under UV and alot of really good squid jigs have minimal UV.

Honorable mention and if I could have a fourth pick it would be a light or white colored jig. I like to throw this if it is bright or if there are alot of baitfish around.
I would include the white with redhead in the same group. I haven't done that well with the red head but have seen my mate clean up fishing next to me with the white and redhead jig.
Finally at night I like a glow jig, lots of options here.

No 2 pick, especially in the Brighton area would have to be a fluoro green yellow
My favourite is the size 3 Yo Zuri on the top, but the Evergreen, DJP, Yamashita and original Yozuri Aurie Q in the same color all work.
This jig will work most conditions, low light or full sun, but it depends on the day.

Thats a hard one. I rotate jigs every trip and have different favorites each season and also as the season changes.
The last 12 months this jig has dominated with 40 of the last 50 squid caught on a size 3 Shimano Sephia clinch flash boost. Color seems to matter as I've run this jig head to head with the same size and style jig in a slightly darker pink and all the squid have gone for the favourite
