They were doing awesome seafood dishes with amazing textures, like " Kingfish Tshimi w Oyster Pannacotta & Thai Prawns ".... anyways....8 shark steaks, 1-inch thick1/3 c lime juice1 ts lime rind, grated2 cloves garlic, minced1/4 ts ground ginger1/2 c vegetable oil1 ts pepper, freshly ground1 tb liquid honey, or maple syrupRinse shark in cold water and pat dry. In a large bowl, combinelime juice and rind, garlic, ginger, vegetable oil, pepper andhoney.Add shark, stirring to coat well. Cover with plastic wrap andmarinate at room temperature for 30 minutes or refrigerate for upto 1 hour, turning shark occasionally.Drain shark, reserving marinade. Grill shark steaks 4-inches frommedium-hot coals on a barbecue, or broil in oven on a medium-highsetting, brushing with reserved marinade, for 5 to 6 minutes perside.Cooking with medium heat, not high, is important in order to keepthefish from toughening and drying out.One of a few more Sharky Recipes still to come...
