Tastes good with a cold beer. 1/2 cup of salt 1/2 cup of brown sugar 2 teaspoons of dried oregano Squirt of soy sauce Dash or Chilli powder 2 litres of water approx Tuna as much or as little as you want. Adjust ingredients accordingly. METHOD: Place sugar,salt,oregano,soy and Chilli into a container and dissolve with hot water. Once dissolved add enough cool water to cover tuna. Add tuna to brine solution and refrigerate for 5 hours. Once 5 hours is up smoke it. pauly s, Murphysegg, reelfun and 7 others 10 Quote Link to post Share on other sites

baitwaster 202 Posted February 4, 2016 Report Share Posted February 4, 2016 hey SG nice, i just use half a cup of brown sugar and the same of salt and a few cups of water until its sweet and salty enough to balance out, a bit of chili powder or flakes and a sprinkle of paprika and garlic salt/powder before smoking works well, love the belly flaps because the fat in the makes em so moist its like chicken.....mmmm beer dutchy and seagypsy 2 Quote Link to post Share on other sites
