I'm just gunna chill out ... catch a few crabs,,, a few Squid ... hopefully i'll get a good day and head out deep and try for a Snaper or two ... some slimey macs -- snook -- Tommies for the smoker would be nice or a mermaid; well I keep hanging the bait out for one -- surely it's gunna happen one day :whistle:

I am no expert -- but I think that it best to remove the guts out of any animal before freezing .... the problem is there are bacteria in the gut that may contaminate your fish during defrost thus it could potentially make you sick..

I did see a program recently on the TV where Scollop's were smoked with Earl Grey tea leaves. In my brine I throw in some pickling spices as well as salt and I have been knowen the add some Chilli Sauce to the mix instead of brown sugar . My last lot I sprinkled ground black pepper on the fish just before I put them in the smoker they tasted pretty darn good to me and the family liked them too , but that is a side issue. It is all about the flavours that you like. You don't have to stick to salt and sugar. and play around with your woods as well I like to use red gum myself it has a strong sm
