Double Trouble got a reaction from Ranger in smoking fish
I pulled a few snapper cutlets out of the freezer to cook up but then when they defrosted i was put off by the smell of snapper, decided i would smoke them instead as i havnt used the smoker for this year.Made up a quick brine solution, approx 3 heaped tablespoons of salt, maybe a tad more, about the same of brown sugar and 500mls water.Brined them overnight although 2-3hrs is plenty.Next day patted them dry with paper towel and into the drying rack for a few more hours.Cooked them for a further 20mins with some redgum chips and they tasted sensational.Nice and juicey and moist, They didnt last long. They were that nice that the next day i pulled out another 2 bags of snapper fillets and smoked them up to.I found a good use for the big reds as the smaller ones normally taste good on their own.

Double Trouble reacted to wishing2Bfishing in KI Circumnavigation Charter
just got back from a 5 day charter around KI with Kangaroo Island Fishing Adventures. firstly i would like to say that if anyone is looking to do a charter down that way i can't recommend going with Gavin Solly, the skipper, highly enough. he wont rest until he puts you onto the fish and when he does find them, hold on!!anyway, we had 8 people on the charter including Shane Mensforth and Archerfish from this site. we set off from Gavins private marina early on Monday morning and had four lures in the water straight away trolling for Bluefin Tuna. i was the first to hook a fish which turned out to be a nice snook which we kept for bait. we kept trolling for about 2 hours when all of a sudden we had a triple hook up. myself and the 2 other fisherman landed the Tuna which were about 12-15kg. this was my first Tuna so i was stoked. we hooked several other Tuna on the run to our first bottom bashing spot and everyone had a ball catching them. unfortunatly one of the boys lent one of the others his rod only to watch it get high sticked and snapped when the Tuna decided that it didnt like the look of the boat and took off. spewing.when we got to the first spot we were bottom bashing around and all hooked a variety of reef species which included Snapper, Nannygai, Swallowtail, Gummy Sharks, Blue Morwong and plenty of other things. we had a ball on those for awhile before heading to our first overnight anchorage but i cant remember the name of the bay. Archerfish will probably know.im absolutly exhausted coz i drove all the way back to Whaylla today so i shall continue the story tomorrow after a good nights sleep in a bed that doesnt rock around. i got about 60 fish to fillet as well so im going to be a busy boy i think!

I hear so much hate about our snapper in the eating. So i'll just put this up as a simple way to enjoy our beloved fish.Snapper can be very gamey, so if you dont treat the fish correctly, it wont taste nice. As soon as you land a snapper, it goes straight on a seawater ice slurry, you should have this organised way before you go fishing, if your worth your salt. Clean your fish also in sea water. So you have some beautiful slabs of snapper fillet, or steaks. Dust them in plain flour. Then dip them in egg, then dip them again in Nostimini mixed with flour and fry very lightly. Very lightly fry that steak. No deep frying here. It really sets this fish off so gorgeous. A squeeze of lemon over the top. Some sea salt. Its what fish is all about. You can do this with any fish, but a thick snapper fillet is the go. A beer or a wine. It really is a good way to enjoy a lovely fish.

Unsure if vinegar will damage eva or cork, but I give my hands a quick soapy wash and.then rinse with vinegar... Best thing I know.for removing that fishy smell... I've been known to.catch the odd fish and am quite partial to pilchard for bait  and vinegar removes all!

Not sure if any of you lads have seen it yet but in the latest catalogue they have nitro jigheads normally $7.95 a pack.... 8 for $10!!!!!!!!!There is a catch! They are the jungle hook type, so for those who aren't familiar with them they are the hooks you rig weedless on soft plastics. They are very lightly weighted with lead and are owner hooks but bloody good value or a great excuse to see if rigging weedless is for you :)I bought 16 packs for $20 and saved myself a touch over $100! 6 x 1/50oz #4 (5 pack)6 x 1/32oz #2 (5 pack)4 x 1/24oz #1 (5 pack)They have a HEAP of them stocked so if there is some left in a week i'll go back and get some more ;)I also noticed they had 50% off yozuri too but i'm stocked up alreadyGet amongst lads and score one hell of a bargain :)Squid

Double Trouble reacted to lffoar in Pickling squid
FYI in case anybody wants to try pickling squid. I've read heaps of recipes and done them every which way but tender until now. Here's my recipe for what it's worth! If you have a slow cooker, one of those cheap Kambrook types is fine, clean the squid, cut into rings and put it in the cooker with only a small amount of salted water. (I just cut up 10 medium squid and used a cup).Put the lid on an cook on low for 4hrs, (I tried six then five now 4 which is OK for me but experiment with how tender you want it. Then I put some ice, salt and water in a big bowl..or the sink, plunge the squid in briefly just to cool and clean it. Stick into jars and top up with white wine vinegar, or whatever you want, add some pickling spices, (a couple of $$'s at the supermarket, shake it to mix and walaaah, good enough to eat the next day....if you can wait that long! Enjoy and let's know if you come up with any variations!

Double Trouble reacted to Ranger in Garfish Rollmops?
Traditionally rollmops are made from herrings (an oily fleshed fish), but I cant see why Garfish couldn't make a good substitute. Any small bones remaining would also be softened/dissolved by the vinegar. Here's a very simple recipe:Method- Fillet the herrings Garfish very thoroughly.- Sprinkle each fillet with a few peppercorns and a little salt.- Roll them up tightly and pack into jars.- Add 1 chilli and a few onion rings to each jar.- Cover with white wine vinegar.- Leave in the fridge for about 5 days.- They are then ready to eat.- Delicious with sour cream.
